Not my Nanna’s Lemon Pound cake

Thanks for joining me. I am Ife Simone Pibiri and today we will MIXit! So, My Grammy doesn’t really bake cakes so I could not go to her for helpful advice on how to help my mom. You see, My Nanna does bake cakes and my brother is obsessed with her Lemon pound cake……like Obsessed…. Anyway, we live very far away, Sardinia, Italy and my brother can’t get “HIS” Lemon pound cake that Nanna makes… and he wasn’t really feeling what my mom was making either. I was his last hope. With a bit of adapting and lots and lots of experimenting I finally came up with an absolutely scrumptious alternative that we call Not my Nanna’s Lemon Pound cake.

Ingredients:

  • 3 cups light brown sugar
  • 1 ¼ cup unsalted butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons vanilla extract
  • 2 teaspoons lemon extract
  • 1/8 teaspoon salt
  • 6 eggs, room temperature
  • 2 ¾ cups flour

Optional Lemon Glaze

  • 1 cup
  • 1 tablespoon butter
  • 2 teaspoons lemon peel, grated.
  • 2 tablespoons lemon juice

Directions

  • (If you’re my age or younger you must get permission and an adult helper.)
  • Gather you cooking utensils: Large bowl, mixer, bundt cake pan or 2 loaf pans or 4 mini loaf pans.
  • Heat oven to 325 degrees F. Grease and flour pan or pans (I generally do 2 loaf pans or 4 mini loaf pans so I can gift one or two and so that my mom doesn’t eat too much and worry about not going to the gym)
  • Beat sugar butter and cream cheese in large bowl until fluffy. Beat in lemon juice, vanilla, lemon extract, and salt. Add eggs, one at a time, beating after each addition. Add flour; beat until smooth.
  • Spread in pan or pans. Bake about 1 ½ hours (it really depends on your stove) or until golden brown and toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Spread Lemon glaze over cake, allowing some to drizzle down the side.
  • Glaze: Mix all ingredients until smooth.
  • Don’t forget to turn off the oven and to clean up because no project is complete until clean up has been had!

  1. Yum! Can’t to try! By the way, your nanna was my best friend in high school and we were room mates for a couple years after college. I must say, while I don’t remember her cooking as a high schooler, she has become a tremendous gourmet chef! I will try your recipe and let you know how it turns out!
